Mutabbal Recipe _ Middle Eastern Eggplant Dip

Mutabal is a very simple yet delicious vegetarian side dish we are going to make it on char coal grill to give it smokey flavor

for this recipe :
4 medium eggplants
1 head of garlic
5 green onion
1 /4 cup tahini
1/8 cup lime juice
1/4 cup olive oil
salt pepper paprika

you can do the courgette version of this by frying up some courgette than mixing it with mint garlic yogurt sauce..

nice recipe but is there any alternate vegetable for eggplant.
