That chuck had an awesome colour to it. I tend to use sea salt, as I like the briny flavour it has, as opposed to the bitter taste of the iodized salt. Be safe and stay healthy brother.

I'm gonna have to try this one...looked fairly easy. I'm still using a cheap water smoker, but it should do well for something like this. Great job!

You should start a restaurant when things are back to normal! When I was in AZ once a month for a week on business back in the day, one of our clients recommended TexAZ in Phoenix. Man, I miss that place! Carnivores’ paradise.

So I used your 321 rib method and everyone loves it!

Question for you, MrBigKid..
Can I use the same rib rub (mustard binder, garlic, S&P and brown sugar from your 321 ribs as on a piece of chuck roast?

Did you get any Smokey flavor in the 1 and a half hours before wrapped? I also have the same pellet grill and can’t get any Smokey flavor what so ever. Great video...
