It’s time to get your birds in the brine!
Just a side note... I’d recommend injecting, and also stuffing its butt with apples, onions, garlic or whatever you would like! It may increase the smoke time a bit... but should help keep it juicy!

Out of curiosity, why’d you decide on curing salt? That’s typically used for jerky, sausage, cured meats, etc.

The turkey looks awesome. I haven't smoked a whole turkey in a while, usually do a boneless breast, since it is only two of us. Keep smoking!

It looks fantastic! One suggestion, have a look at the "Good Eats" episode on turkey, in particular, the carving of the white meat. He removes the breast meat in one piece, and sliced it on a carving board. Super easy to do, and it doesn't crumble nearly as much. Thanks for the video, this Thanksgiving is the first year with our Pit Boss, and I can't wait to smoke my first turkey.
