I tried this at home and ended up with a carbonated end product. This is not the intended result?

it's just normal ice cream when you are finished. Treat it as you would any other ice cream!

Hi, thanks for the video Chefsteps.

Question: I use a kitchenaid stand mixer (artisan) and the bottom of the bowl gets really hard and frosted up, thus making the mix attachment elevate during mixing, leading to uneven churn. Is there any solution to this?

I love the idea, but I'd be scared to do this with ice cream. While it seems fine for sorbet, at that mixer speed and working time, I feel I'd end up with butter if I used an ice cream base.

Dry ice is just frozen carbon dioxide so you don't have to worry about where you get it from.

You don't eat dry ice, you only use its abilities to quickly frees an element. But when you blend dry ice, does the blender have to be of plastic??
