Tip: If you don’t have a fan in your oven, cover the breast with a small piece of foil and remove it for the last 15-20 mins of cooking. Cast iron is absolutely the best vessel to roast a chicken because it radiates heat better than anything else. But you have to get it hot on the stove first, starting with a bird at room temp.

Made this tonight and it's excellent. Also, the drippings were so flavorful and beautifully rendered that next time I'm gonna make a pan sauce.

I've made this about 5 times so far! Every time it tasted amazing! And I was given so many compliments Super hit for christmas! I am currently making it for dinner But n needed to just double check my measurements...And decided to leave a comment! You have to make it! It's super easy and omg delicious!

my first time cooking a roasted chicken without any knowledge at all was at the age of 14 hahaha my dad (r.i.p.) who was very very picked, especially with my "experimental" cooking/baking, he was HOOKED!!!! I'm proud to say, roasted chicken was one of my many first dishes I learned to cook in my own 😊

Need to try with this stuffing. My favorite mixture since the 90s has always been chopped Kalamata olives and fresh tarragon with olive oil.
