Ingredients:
* 3-4 Japanese sweet potatoes (cut into cubes)
* Avocado oil spray
* Salt and pepper to taste
Instructions:
1. Boil the Potatoes: Boil the cubed Japanese sweet potatoes in a pot until just tender. Drain and let them cool completely—this step is super important for getting them crispy later!
2. Prepare for Baking: Preheat your oven to 425°F (220°C). Lay a sheet of parchment paper on a baking sheet. Place the cooled potatoes on the sheet, making sure they don’t touch each other.
3. Season: Spray the potatoes with avocado oil and season with salt and pepper.
4. Bake: Bake the potatoes for 30-40 minutes, flipping halfway through, until they’re crispy and golden brown.

If you live in ATL, they can be found at Buford Farmers Mkt, They are delicious. Baked them whole. I eat it with the skin.

My Kroger has them occasionally. They just call them asian sweet potatoes.
