Triple Chocolate ‘Levain’ Cookie Recipe 🍪
Dry Ingredients:
* 1 ½ cups cake flour
* 1 2/3 cups all-purpose flour
* 1/3 cup cocoa powder
* 1 tbsp cornstarch
* 1 ½ tsp baking powder
* 1 tsp baking soda
Wet Ingredients:
* 1 ¼ cup salted butter, melted but not too hot
* 1 ¼ cup packed brown sugars
* ½ cup white granulated sugar
* 2 large eggs
* 3 egg yolks
* Splash of vanilla (optional)
Chocolate Mix-Ins:
* 1 ½ cups semi-sweet chocolate chunks
* 2 milk chocolate bars, chopped
Instructions:
1. Mix Dry Ingredients: Whisk together all dry ingredients in a bowl (making sure to sift your cocoa) and set aside.
2. Prep and Add Chocolate: Chop your two milk chocolate bars.
3. Mix Wet Ingredients: In a separate bowl mix together brown sugar, and white sugar and then add your melted butter and mix until smooth. Add eggs and egg yolks and a splash of vanilla if desired, then mix thoroughly.
4. Combine: Gradually add dry ingredients to wet, stirring until just combined.
5. Prep and Add Chocolate: Fold in semi-sweet chocolate chunks and chopped milk chocolate.
6. Portion & Chill: Form dough into balls with jagged edges and chill in an airtight container for at least 4 hours or overnight.
7. Bake: Preheat oven to 400°F. Place dough balls on a lined baking sheet and bake 13-15 mins (13 mins for gooey, 15 for more set centers).
8. Cool & Enjoy: Let cookies cool on the sheet for 5-10 mins before transferring to a rack.
