Welcome back to another canning video! In this video I show how to make homemade salsa from fresh tomatoes. I also show how to can the salsa. It is easy, healthy, delicious, and perfect! This salsa can be made spicy or mild. As always, the video includes a tutorial with step by step instructions and no "filler" content. It is very "to the point!" Enjoy and happy canning season! :)

**Amazon Products In Video:
-Canners:

*RECIPE:
-10 pounds of tomatoes, chopped (with or without skins).
-3 large onions, chopped.
-1/2 cup Jalapeno peppers, chopped. (add more if you want very spicy!)
-5 cloves garlic, chopped.
-1 1/4 cup vinegar or lemon juice.
-1 Tbsp salt (any kind without indine).
-1 Tbsp honey or sugar.
-3 Tbsp cilantro, chopped.
-Pepper (to taste).
-You can also add banana or bell peppers.
-To make thicker-add tomato paste (optional).

*DIRECTIONS:
-Combine all ingredients in pot, simmer 30 minutes (puree optional).
-Fil Sterile jars, leave 1/2 inch headspace.
-Waterbath can - Quarts - 40 minutes, pints -35 minutes.
(OR)
-Pressure can - Quarts and pints both = 15 minutes @ 10pounds pressure (adjust pressure based on elevation).
-Enjoy!

I just canned this and taste tested it with a couple tortilla chips and it tastes just like the Tostitos chunky salsa to me! (I also added lime juice instead of the lemon juice) I did use the full vinegar so all is good. It’s so delicious, my husband is going to be so happy to have salsa for quite a while. Thanks a bunch for the recipe, I’ll be saving this for next tomato season too.

My husband and I just made your salsa! First time canners over here. I am now wondering, is the weight of the tomatoes before coring them and peeling skins (if we try that next time) or after? Don’t want to mess with the ratio. Thank you!

I just hot water bath my salsa for 15 minutes and they come out fine.That from my mothers canning book which says 10 minutes at sea level and add one minute per 1000 feet in elevation. I’m around 5000 feet hence the 15 minutes!

Do you split the 1 1/4 cup between vinegar and lemon juice? I plan on using 20lbs of tomatoes so 1.25 cup vinegar and 1.25 cup lemon juice?

You said “you can alter, the taste, but DO NOT MESS WITH THE MATERS AND VINEGAR ratio”.. but then you added tomato paste…. Im confused now.

Is that an aluminum pot??? Whoopsie. Lids will sterilize during water bath. No need to pre-heat since they changed the gum ingredients in 1970.
