INGREDIENTS:
6-8 oz salmon seasoned with salt, ground black pepper and paprika
1 (5.5 oz) kamaboko - steamed fish cake; shredded finely
1 (10 oz) pack of imitation crab meat; finely chopped
8 oz cream cheese; softened
1 cup kewpie mayo
3 cups white rice
2 tbsp sushi vinegar
1 tsp sesame oil
Furikake
Sriracha
Unagi sauce
Green onions
1.) Season salmon with salt, pepper and paprika. Bake at 375 degrees F for 15-20 mins (depending on thickness) then flake with a fork.
2.) Combine salmon, kamaboko and imitation crab in a large mixing bowl. Add cream cheese and kewpie mayo. Mix together.
3.) Add cooked rice to a 9x13 baking dish and drizzle sushi vinegar and sesame oil. Mix well. Then flatten into an even layer. Generously sprinkle furikake over rice.
4.) Spoon over salmon mixture over rice and smooth it out. Then drizzle sriracha and unagi sauce.
5.) Bake at 350 degrees F for 10 mins, then broil on low for 2 mins.
6.) Top with furikake and sliced green onions.
7.) Serve with nori.
