A LOT of people forget that he wasn’t always angry this season. He only got that way after Sasha and his realization that him trying to change things wasn’t working, so he went with this unyielding laser-focused determination to obtain the founders power to (hopefully) change it.

It's the same reason why he asked Mikasa if she loved him in Marley. He knew full well what her answer was going to be, and what would happen if she gave a different answer. He wanted to know if the future was destined. That's why when the old man greets them with tea, he says "perfect timing"

After Sasha's death, he finally reaches his breaking point, as he realizes there's nothing he can do to escape that future.

There is a theory that says that when Sasha dies, her last word is not 肉 (niku) (meat in Japanese) but Nicolo but she couldn't finish speaking.

I immediately could tell that there was something wrong when he started laughing at Sasha's death so my overthinking made me come to that same conclusion that he already knew this was gonna happen.

The Tragedy of Eren is actually similar to Paul Atreides in Dune, he is a Prophet trapped within his own vision. Throughout the course of his journey, he tries time and time again to jink and weave, hoping to deny the awful reality he has forseen, but ultimately becomes convinced that nothing will stop it. So, rather than fight Destiny, he seeks to control it to minimize the damage as best he can.

He did the same breakdown laugh in s2 end when hannes died. So many didnt realize it

Eren’s whole character revolved around freedom and making your own choices, at that moment, he realized he was still a slave to fate and was helpless to do anything about it, and gave in.

Because he laughs when he knows he's hopeless and when he's "failing". Kind of like a nervous "I'm fucked" type of laughter

If I was in any of the scouts shoes I probably would've laughed as well, not because I find her death funny but because even while dying she was thinking about food, just such a Sasha thing to do, I was devastated at her death but even I found that part pretty funny
