Here in the US, in New England, settlers have used a weed called "cleavers" (galium aparine) - it's a sticky trailing little plant - if you grab a bundle, crush the leaves and stems a little bit, put it in a net and suspend it in the milk - it will curdle the milk in a short time...it also has medicinal purposes, and can be fed to livestock

Wow! Many thanks for this video. I make cheese and I am a vegetarian and so use only microbial rennet, but while I learned that you can use thistles to make rennet, I never knew HOW to extract the compounds or even from what part of the thistle the rennet was made. Omg I planted milk thistle this summer I got many flowers and they finally died because last 4-5 days weather in 30s 20s . Smells amazing, beautiful leaves and bees love them 😁 I got ton of dry flowers now I know what to do with them 😁 Grazie 🙏🏻🙏🏻🙏🏻

This is changed my life thank you.. across the street from me there's like so much of this stuff it's you can't walk through like 20 ft by 2000 ft thick.. 9-10 feet tall..

never heard of vegetable rennet. what a great incentive to get out and harvest thistles which are invasive on this side of the pond. flower petals can be stored dry, too

Thank you very much that you share your knowledge! I make my own cheese and I have a funny feeling with the vegetarian Rennet in the shops. There is an other herb called Bedstraw (Galium verum). That works fine too.

We call it a Scottish thistle. remembrance and love. I have one that grows wild in my yard.
