The video shows the opening of the pod. It's easier with the hammer but you can use a knife too if you want to cut it evenly. At this point, you can eat the white part if you don't want to ferment it to make chocolate. It is quite delicious although very gooey.

Do you do anything to ferment? Or do you just leave in a glass bowl with a towel over it? Does the towel need to be wet? Can i put in a glass jar and leave sealed 7 days?
