Zeppole - a simple Italian treat. They come in various different versions and today we are going to share with you the simple, basic Calabrese version - nothing fancy, but a quick and easy treat :) Hope you give them a try

Basic Calabrese Zeppole
Ingredients
• 2 cups of double zero flour (00 flour) (260 – 267 grams) (9 – 91/2 oz)
• 2 TSP baking powder
• 1 tsp of salt
• ¼ cup white sugar
• 2 eggs
• 1/8 cup (30 grams) (1 oz) melted butter
• Oil for frying
• White powdered sugar (powdered icing sugar) for dusting
Process
• Mix flour, baking powder, salt and sugar in a bowl.
• In a separate bowl, add the eggs and melted butter – mix together
• Add the egg mixture to the flour mixture and mix together
• Work into a dough and knead for 5 – 10 minutes until the dough is soft & smooth
• Wrap the dough with plastic wrap & let stand for a minimum of 30 minutes or longer
• Add oil to a frying pan, enough to semi deep-fry, and bring up to around 350 deg F
• Tear off a piece of dough, approximately 5 cm or 2 inches, and place into hot oil
• Add more pieces, but do not overcrowd the pan
• Fry until golden brown, then turn them over, and fry the other side till golden brown
• Remove and place on a paper towel to absorb some of the excess oil.
• Sprinkle a generous amount of white icing sugar on top
• Enjoy
