Homemade Cold-cut Recipe
Ingredients:
1 kg of pork
20 g of salt (50% table salt + 50% curing salt)

2 tsp ground pepper
1 tsp allspice berries
1 tsp ground nutmeg
3-4 minced cloves of garlic

or you can adjust spices to your taste

I use curing salt that contains 0.6% sodium nitrite and 99.4% table salt. Be sure what kind of salt you use and always follow the directions provided by the manufacturer.

Congratulations from Italy..it's the first video that I see (reference to ham making) that is fast, to the point and clear. The written instructions are crystal clear. I prepared it this morning and no one it's resting in the fridge for 3 days.
I'll will let you know the outcome on Sunday, after I've cooked it and served it..
