"I knew you would" is correct and can be used in written English. You can use it when you have a strong feeling that something was going to happen and it came true. For example: "I knew you would get the promotion - your hard work paid off!".

Will and would are both valid on the first one. Yeah, will is future tense and the statement uses the past tense of promised, but this would have different meanings according to each word. Would can be past or present conditional, and will just means that in the past, she stated that she will do something in the still current future.
