Does encrypting the boot partition protect you from this? Since you can't get into grub without encryption key

If it's that easy, what's the point in even having a password to begin with? Anybody can steal my computer and just reset my password

I use gentoo and i set grub timeout to zero. So when i hold shift while computer boots it doesn't show grub. So your method does not work when grub timeout set to zero.

Can you BYPASS COMPLETELY any username and password and just use the OS like I currently do with Windows? IOW - NO login with any username or password required - AT ALL!!

This is terrible! You are ruining your GRUB config! You need to chroot from a live environment if you want to do this correctly!
