French-Style Walleye with Butter and Capers

Rinse walleye filets and dab them dry
Season both sides of the filets with salt and pepper
Lightly dredge the filets with flour
Add 4 tablespoons of butter to a pan on medium heat
Lay filets on top of the melted butter in the pan
Add a dash of capers, not too many
Cook filets for 2 to 3 minutes and then flip them
Add more butter and baste
Cook filets an additional 2 to 3 minutes
Squeeze lemon to taste
