Not only are they gluten-free, but also they are vegetarian. I picked up the freshest fruit I could find and made vibrant layers in these two breakfast parfaits: Pumpkin Blueberry Parfait and Mango Chia Seed Pudding Parfait. You will not be disappointed when making these!

Pumpkin Breakfast Parfait
- 7.5 oz pumpkin purée (1/2 of a can)
- 1 Banana
- Blueberries
- Pumpkin Seeds
- Gluten-free granola or Oatmeal mix
- Honey
- Coconut yogurt & chia seeds
- Collagen powder (optional)

Mango Chia Seed Pudding Breakfast Parfait
- Yellow Mango
- 2-4 tbsp chia seeds
- 1/4 orange juice (I made it with orange juice and turmeric)
- Honey
- Coconut yogurt
- Strawberries
- Pomegranate seeds

Clarissa, are there any alternatives to mango and pumpkin? I don’t have those. Apples, bananas, oranges, pears. Canned peaches and pineapple. 🙁
