What do you do with the discard? Could it be simmered for stock? I'm sure dogs would love it.

If you cut it into roasts, does it matter where you cut? Do you still pull off fat and silver skin? Do you tie it with strong?

I have a 25 lb piece of inside round in my fridge and didn't realize what I was getting myself into 😂

Nice, Thanks for the refresher, I got a 25 pounder yesterday for 50% off LOL 1.56 a pound, it had been a few years since I got on of these though, I usually get a Big ole Chuck Roll .
you know what I do with that cap is clean it all up and address it like a gnarly flank steak, dry salt, black pepper sear the crap out of it on a cast iron griddle after smearing it with butter and then slice it up med rare against the grain of course, and do up Mexican street taco night like a boss. Mine came out odd, I was hoping for more steaks, I got more burger. Good thing I like that though.
They have one more down there at cash & carry, I might swing by and get it if it's still there, Looks like I got some freezer room. LOL you cant beatem for 40 bucks a pop these days.
