What type brand of knife do you recommend?

Where can you get prime beef — years ago (a couple decades +) finding prime was fairly easy but now I never see it. Of course 30-40 you had a butcher in almost every town - I’m in state capital city area (city and about 5 county area) and we don’t have one left.
