Apple Cider Doughnuts are definitely one of the 'pros' of living in the Northeast. Honestly a true apple cider doughnut is not like any doughnut you've ever had before. The apple cider does something magical to the dough, something wonderful. The entire outside of the cider doughnut becomes just a little crunchy, while the inside remains so light and fluffy that it just floats in your mouth. Even without all the cinnamon sugar topping, it's still really amazing. It is by far the best thing to eat with a cup of hot apple cider as you are walking around the cold outdoors up here. If you are buying your doughnuts and cider from a booth instead of making them, do the bee check. If you don't see any bees buzzing around the booth, MOVE ON. If you indeed see a plethora of happy bees attracted to the golden nectar being made inside, you have arrived at the right place. I recommend dunking the apple cider doughnut into your hot apple cider for 3 seconds. Dunking it for less time than that and you won't get the perfect balance of cider and doughnut ratio, any more time than that and you will lose your doughnut in the apple cider. Not the worst thing in the world, but everyone around you will definitely know you are a novice, so don't let it happen! Happy Autumn everyone!

As someone who grew up mostly in Michigan, cider donuts are as essential to the autumn experience as football, pumpkin spice, and orange leaves. Sadly, since I moved South, there haven't been many opportunities to get them. But this video gives me some ideas...

Made these professionally for 7 years.

We made the donuts using the drop method with a donut hopper. load the hopper with the mix and dropped the donut directly into the fryer.

The dough itself needs to be thinner but in turn, you dont need actually roll it out. Makes the donut light and fluffy.

I grew up on an apple orchard. We never made doughnuts, but every year we would make a giant batch of apple butter over a bonfire.

I made apple cider donuts a couple weeks ago. It was Brian Lagerstrom’s apple cider donuts. First time I’ve ever had something like that and it was amazing. He uses a straight apple cider and a hybrid yeast/cake dough. Also he coats the doughnuts in raw sugar to give them a bit of a crunch. Probably the best donuts I’ve ever had and they were bursting with apple flavor.

I worked on an apple orchard for 2 years and the apples were by far on a completely different level to any storebought apple. They didn't look as shiny or clean, but they were by far the best tasting. The cider made from it was not comparable to apple juice, due to the cider being purely better in every shape and form. We even had dark red pigmented apples that turned the apple cider a ruby red hue, or green apple cider made from unripe apples. Doughnuts are all the same though, I think the cider makes the moment.

When you’re done with the apples and the juice you can use the leftover fruit mush to make apple sauce or apple preserves

I live in FL and I just had my parents from New England bring me 2 dozen of these and had them buy a third for their flight crew. They were quite appreciative as was I LOVE AC donuts

Thanks for the grams. It saves me from washing a ton of measuring dishes. Grams also covers the entire range of recipe weights from 5-7gms for items like yeast and salt to hundreds of grams for items like flour and sugar. Same set of scales and I can just keep going.
