I work in a kitchen and today my chef came in with about a dozen apples very excitedly and somewhat sneakily. He very carefully was at his cutting board for a few moments before a delighted chuckle came from the head chefs corner."oh h h h h yeah, that's the apple" it was a very specific varietal that he hadn't had for almost 10 years and he'd been looking for all that time. My adopted grandmother grew up on a tree farm in Oregon and had her own grove of apple trees she planted and tended. She loved to graft trees with different varieties of apples so she could have nearly any type of apple when ever she wanted.

I loved the trees that were grafted with half green apples and half red apples... you could see the different colors from far away.

She told me there were always a few apples that got cross bred by the bees, but she loved the fact it would be random every year.
