Did a lot of copper and nickel plating with Caswell kits years ago with great results. Plated 30 or so old door knobs for a friend and they have held up very well. Prep work is the key to success. They also had a kit for silver plating over plastic that worked but took a lot of testing to get right.

Polishing lacks protection and requires constant maintenance. Chrome is hard and pretty resistant to tarnishing.

why you are plating stainless steel parts? you should make these parts from pure iron, it is not going to be corroded anyway (when plated)
