I have a few questions and ideas. You didn't say it in your descriptions of the werewolf/vampire goals, but will you be getting all of the werewolf/vampire perks added in the Dawnguard DLC? As an additional goal, you could also try to get and develop every house/property in the game. Also, I'm not sure if you're aware of these since nobody really talks about them, but there are 10 treasure maps scattered across Skyrim (and 3 special ones), and it might be fun to try to find them all and follow them to their treasures! Final idea, would you consider fully developing the Ebony blade by killing your friends?

I've been concurrently thinking up my own plans for my own run of this kind of thing. My solution for mutually exclusive quests is completing the maximum possible amount of quests, prioritizing interesting ones over repetitive ones. For the civil war, I found a way using the quest Season Unending to make only 3 of the quests not doable (Notably the Imperial/Stormcloak sides of the battle are considered radiant versions of the same quest in the game). Since each side has 4 holds at the start of the game, that would normally make 4 quests, including at least one interesting one, impossible. I'm pretty sure you can make it 3 quests impossible (all pretty similar to other quests you CAN do) for both sides, but my calculation was made for the imperial side

Here's the choices that would allow for the maximum amount of quests:
Before Season Unending:
Do not join the Stormcloaks prior to doing this quest.
Do not go beyond the Jagged Crown quest prior to Season Unending.
Either do not visit Markarth prior to doing this quest, or complete No One Escapes From Cidhna Mine.
Retrieve Jarl Korir's (Winterhold) Helmet (This quest will become impossible once Winterhold changes sides.
The Quest:
1) Make Elenwen Stay.
2) Give Winterhold to the Imperials
3) Make Stormcloaks Pay Compensation

This will make Battle for Fort Snowhawk, Battle for Fort Neugrad, and Rescue from fort Kastav impossible, but all other civil war battles will become accessible. I haven't had the chance to test this out in game yet, so I'm basing it entirely on the UESP's detailed page for Season Unending, but it should work. Another note is that a lot of jarl-related quests become impossible once their city switches sides. I've noted all the ones affected in Season Unending, but as a general rule you should become a thane in a city prior to taking its hold in the civil war.
