It is assumed that anyone that eats another human will begin shaking, but it is actually because they suffer from a disease called Kuru disease. This is caused by eating human brains and spinal columns. The first sign comes as shaking limbs, and this is why they keep checking people for the shakes.

Kuru isn’t caused by cannibalism, it’s a prion disease (like mad cow) that spreads when a person/animal consumes parts of the nervous system (brain, spine, et fam) of an infected person/animal. While we don’t know how it is caused, it only becomes widespread if cannibalism is part of the food chain (humans eating humans, cows eating cows)

The hints this movie gives at him being blind are subtle and cool, especially in this scene: he doesn't notice the hands shaking until he hears the teacup rattling against the plate.

The shakes actually is an effect of human cannibalism. Kuru is another animal entirely, and is only transmissable via consumption of the prion protein that causes it.
