⭐️ Buttery-tender eggplant cubes in a creamy and tasty curry sauce are a winning combination in this easy eggplant curry recipe. Serve it with white rice or naan bread for a balanced Indian-inspired dinner; it takes about 30 minutes to make.

⭐️ Ingredients
1¼ pound (20 ounces) eggplant about 1 very large or two small (+ 1½ tablespoon olive oil, ½ teaspoon salt, ¼ teaspoon black pepper for roasting)
1 tablespoon olive oil
1 medium onion chopped
2 cloves garlic grated
1 teaspoon ginger grated
2 teaspoon curry powder
1 teaspoon cumin seeds or ground
¼ teaspoon red pepper flakes
1 teaspoon turmeric powder
½ teaspoon ground coriander
½ teaspoon black pepper
1 teaspoon salt
2 - 3 cups vegetable broth based on desired consistency
1 can (15 ounces) chickpeas or 1½ cups of cooked chickpeas
1 can (15 ounces) crushed tomatoes
1 can (14 ounces) coconut milk
1 teaspoon garam masala

I tried your recipe today, and it tasted so good. It was really hard for me to wait for the 30 minutes because it smelled so mouthwatering! I'm really glad that you eat curry with lemon for its an Indian tradition to avoid Goddess Alaxmi, the goddess of bad luck and poverty with chili pepper and lemon. Indian people also grow lemon and chili pepper in front of their houses to welcome good luck. I have some Indian blood in my tribe, and one of my ancestors tried so hard to spread authentic Indian curry around Japan. Your sincerity toward cooking always touches my heart. Thank you so much!

Wow, this recipe was great for the last eggplant and tomato harvest of the year. I only wish i had this recipe at the beginning of my eggplant and tomato harvest😅. I also canned some home made chickpeas, so I Had everything ready to go. All the family loved it thanks!

We eat it with chapati or flat bread in Pakistan but adding chickpea is new idea will try it definitely

This guy has some genuinely great recipes. I have made a number of them, and they are all delicious, no question about it p
My problem however, is that so many of his recipes are just variations on each other. The currys are all a great example. Some have chickpeas, some don't, sometimes he swaps out zucchini for eggplant WrestleMania of them are basically the same, just slightly different takes, and the spices and seasonings and flavors are essentially the same. I get that he's doing the kind of food he's comfortable with, and that's cool. But I'd like to see more recipes that are not curries, not essentially the same thing.
