that's something lots of hispanics do to prep carne asada, we use that and then either onions, spices, limes or lemons before we cook the meat so the juices marinate in the meat and the beer helps give the meat a softer texture

Try frying it afterwards. Kind of similar process in a lot of restaurants I've worked in. We prebaked the wings then fry them for service.
