LOVE the milk bath trick! Wonder how that works? Maybe the proteins in the milk? I also recently discovered a trick to keep the fishy odors at bay [no pun intended, hee hee] while you cook: simply simmer a couple of cinnamon sticks in a small saucepan while it cooks! What a gourmet meal this is, Jenn! And your filming and prep work was perfectly executed! So happy to see you posting more often. Enjoy this beautiful day! Looks wonderful and I love simple meals. I usually add drill to my fish along with the lemon.

I always use a milk soak with catfish. It helps with that funky taste you get with catfish sometimes.
