NASU DENGAKU 🇯🇵🍆 Japanese Miso Glazed Eggplant | I COOK 4 U

This is a traditional Japanese dish called „Nasu Dengaku“ (Miso Glazed Eggplant). The sweet miso sauce is a perfect match for the eggplant. It will melt in your mouth … yummy!

INGREDIENTS:

- 2-3 eggplants
- 1.5 tbsp miso paste
- 1 tbsp mirin
- 1 tbsp sake
- 1 tbsp white sugar
- 2 tbsp vegetable oil
- 2 tbsp rice vinegar
- 1 stem green onion, cut finely
- 1 red chili ( mild),cut finely
- roasted sesame seeds ( upon you need )
- olive oil ( upon you need )

INSTRUCTIONS:

Preheat the oven to 200°C (392°F).

Cut eggplant in lengthwise, then the cut around the edges and diagonally so that it looks evenly. Brush olive oil and spread evenly, put them on a baking tray with baking paper.

Bake the eggplants at 200°C (392°F) for 20 minutes.

Meanwhile, in a cooking pot mix the miso paste, mirin, sake, sugar, vegetable oil and rice vinegar. Mix all together until well combined.

Simmer in low heat until the sugar is completely dissolved, then set aside.

Take the eggplant out of the oven, put miso mixture on the top and brush evenly. Now put the the eggplants back in the oven and bake for another 10 minutes.

The miso glaze should be bubbling when you take it out of the oven.

Sprinkle sesame seeds, green onions, red chilis on the top. Serve immediately!…yummy!!
