I’m from Mississippi, and I have a cousin who moved to England and married a guy who owned a fish market. When she found out that crawfish are an invasive species there, she told him to have his guys go out and catch as many as they could. While they were doing that, she made up the best Cajun crawfish boil spice mix she could come up with, so when they got back with the crawfish, she boiled them just like these. They absolutely loved it.

Crawfish boils are such a communal experience, so I strangely enjoyed the last hyperlapse. You just get into a rhythm, and you don't even think about what you're doing, you're just talking to your family and friends, working your way through the pile of seafood.

I'm really glad this woman (DEBBIE) kept coming back. She helps them more than I think they realize and her reactions to them also are funny. Not to mention she is teaching people all over the world what to do in New Orleans when eating the local seafood.

As a Louisiana girl, born and raised. I can confirm everything about the amount crawfish you eat in one sitting is correct.

I am a born and raised Californian. We have an overabundance of crawfish in our waterways. There is a festival in Isleton California called the crawdad festival. It is huge. Yet they crawfish in Louisiana are cooked way better. I didn't understand until a Cajun friend took me there. Big eye opener. I learned so much about Cajun food just so I could make it myself. I make a fantastic Jambalaya thanks to him.

I’m convinced Ollie was from Louisiana from his past life:

-Had a sense of humor with the soft shell crab
-Caught on how to shell a crawfish
-Would consistently suck the crawfish head
-Compare crawfish to addicting flaming Cheetos
-The face trying the crab juice, which I don’t think Ollie has ever lit up like that for any reaction lol 😆
-Experimenting to see if sucking the lobster head will be good
-Found put it wasn’t
-Kept eating more crawfish

My wife and I planned our anniversary trip (currently on it) to New Orleans and have been following your food stops. Salvo’s is hands-down the best place we have been to. This place more than lives up to your review. Fantastic food and wonderful atmosphere. Debbie was there and Rory was our server. He was great. Highly recommend the King Cake bread pudding. Thanks guys!

I was invited to a backyard crawfish boil in New Orleans many years ago, during my only visit to the city, and it remains the single greatest meal of my life. I ruined a shirt. It was like I survived a crawfish explosion.

I was stationed at the military base which is right behind Salvo’s. I can’t tell you how many pounds of crawfish I have consumed there. Their boil spice blend is the absolute best in southern Louisiana. Amazing place!
