In this video, I prepared Peri Peri Sauce and Peri-Peri Chicken which was brought to Mozambique and Angola by the Portuguese. Peri-Peri is very popular in South Africa and has been adopted by other cuisines all over the world. Nandos is a restaurant chain that serves peri peri chicken, and I’ learning, Nando’s is also in Chicago, Maryland, and many other states in North America. Enjoy this special, quick, and easy homemade version, and you may just minimize your trips to restaurants that serve this classic chicken dish. 🤩. INGREDIENTS:
Peri peri chicken ingredients:
* 12 chicken drums
* 1 chicken bouillon cube
* Salt to taste
* 1 large onion sliced into rings
* 1 jalapeño pepper (optional) sliced into rings
*** marinate chicken with 1 cup peri peri sauce for 1 hour or more. Then arrange onion rings, and jalapeño pepper rings in roasting pan, as a bedding for chicken. Then arrange marinated chicken on top of onions and jalapeño rings. Pre heat oven on broil or grill option, and place roasting pan on top-most rack, that is closest to the flame/heat source for 10 mins. Flip chicken after 10 mins and return to oven for 10 more mins. Then place chicken on middle rack, and change heat setting to bake at 400°F for 25 mins. Baste the chicken with reduced peri peri sauce and return to oven for 5 mins. Total oven time is 50 mins.
Ingredients for rice:
* 2 cups basmati rice
* 1 habanero chili
* 1 clove garlic
* 2 sprigs or 1/4 tsp thyme
* 1 shallot onion
* 1/2 tbsp cold pressed coconut oil
* 3 tbsp coconut cream / milk
* Salt to taste
* 4 cups water
*** Cook in rice cooker ***
Ingredients for Brussels sprouts:
* 60 Brussels sprouts cleaned and halved
* 2 shallots chopped
* 3 cloves garlic thinly sliced
* Pinch of freshly crushed black pepper
* 1 tsp honey
* 2 tbsp cooking oil
* 1/4 tsp red pepper flakes
* 1/2 tsp all purpose seasoning
* 1/2 red bell chopped
*** Pan fry Brussels sprouts in skillet with cut side down till charred - should take approximately 3 mins on medium/high heat. Stir fry for additional 1 min, and add shallots, and stir fry till shallots are softened. Add all purpose seasoning, crushed black pepper, honey, and stir. Then add chopped red bell pepper, and stir fry additional 1 min, and serve. Total cook time 10 mins.
