1/4 cup coconut oil, solid
1/3 cup coconut sugar
1 egg yolk, room temp
1 cup blanched almond flour
1/2 cup chopped dark chocolate (or chocolate chips)
1 tsp vanilla extract
1/4 tsp baking soda
Pinch of salt
Preheat oven to 350ºF. Grease a cast iron skillet or round shallow baking dish with coconut oil. Beat together coconut oil, coconut sugar and egg until smooth. Add vanilla extract and mix until smooth.
Add almond flour, baking soda, salt, and mix together. Fold in chopped chocolate.
Add cookie dough into skillet and even out on top. Bake for 15-18 minutes or until it turns golden brown around the edges. Serve warm with ice cream. Enjoy!
