CHICKEN THAT DOESNT SUCK. This is one of the best 1 pan chicken recipes you’ll make. The secret is the marinade that will elevate the chicken and a simple 3-ingredient sauce made with just @Chosen Foods Avocado Oil Classic Mayo, red curry paste, & lime juice - its packed with so much flavor and so unbelievably good!
I’m using bone-in skin-on chicken thighs to make the chicken more flavorful and juicy, but you can remove the skin if you prefer, too.
This is how I made it- feel free to multiply for more!:
1.Grab 4 skin-on bone-in chicken thighs, dab dry with a paper towel and add to a bowl.
2.I first season the chicken. Drizzle with Chosen Foods Avocado Oil (I love this because its a neutral oil, made with 100% Pure Avocado Oil, and has a high smoke point), season with salt, pepper, and 1/2 tbsp each paprika, chili flakes, and onion powder. Mix well and let this ideally sit for 2 to 6 or longer (if longer, pop in the fridge).
3.Preheat oven to 410F. Remove chicken from fridge and bring to room temp before putting in the oven.
4.While that happens, make your sauce. I whisked together 4 tbsp Chosen Foods Classic Mayo, 2 tbsp red curry paste, the juice of 2 limes, & a small pinch salt. Whisk well, taste, adjust as you wish, and transfer 3/4 of it to a separate serving bowl. Brush remainder over the seasoned chicken thighs for even more flavor.
5.Place chicken on a wire rack and put in the oven at 410F for 35-40 mins.
6.Remove chicken from the oven, plate it. Again, you can serve this with whatever base you like, your salad of choice, and this sauce.
