Most banana bread is basically just refined, empty sugars OR it’s “healthy” which means it tastes bleh and it’s still full of phytic acid and other anti-nutrients. But it doesn’t have to be this way. I’ve spent months perfecting my recipe to maximize flavor and produce a wonderfully spongy texture, while still proving really good nutrition.

SOAKED FLOUR BANANA BREAD
*Ingredients*
• 3 mashed, overly-ripe banana
• 1/2 cup raw milk
• 1 teaspoon apple cider vinegar
• 1 3/4 cup whole wheat flour
• 2 eggs
• 1 cup whole cane sugar
• 3/4 cup butter, melted
• 3/4 teaspoon ground cinnamon
• 1 1/4 teaspoon baking soda (sub 1 tsp)
• ½ teaspoon cream of tartar (sub 1 tsp baking powder)
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt

*Directions*
1. In a large mixing bowl or electric stand mixer, mash the bananas until only small lumps (or no lumps) remain.
2. Add the milk, vinegar, and flour and mix just until combined with no flour clumps.
3. Let soak at room temperature for 12–24 hours.
4. Preheat the oven to 350 degrees F. And lightly grease a standard loaf pan with butter (but do not flour the pan).
5. In a large mixing bowl, whisk the eggs and sugar, and then whisk in the melted butter until smooth.
6. Add the cinnamon, baking soda, baking powder, vanilla extract, and salt to the egg mixture and whisk to combine.
7. Add the egg mixture to the flour mixture and stir vigorously until well combined.
8. Pour the batter into the loaf pan and bake on the center rack until risen and a tooth pick comes out clean (about 70 minutes).
9. Remove the loaf from the oven, and let rest in the pan for about 20 minutes until cooled enough to remove.

Thank you Dennis, I really like the content you’re creating, any recommendations for cookbooks to start with for more healthy eating. I have some hormonal Issues ( PCOS ) & I want to balance my hormones by cooking and eating healthy and adapt to a healthier lifestyle but I don’t know were to start.

So whole cane sugar is okay to eat in moderation? Or it's just best to have no sugar at all ever? (Speaking hypothetically, of course. Not like I'm completely giving up sugar anytime soon.)
Maybe you could do a video on sugar sometime.
