The skin has its own flavour. Crisp skin makes it so good. Keep it with the fish

Yummmm, how delish does this I was off to the store and saw rainbow trout was on special. I rarely cook fish because it wont behave when I try lol, so I thought ill just have a quick look for a pan fried trout recipe and this was the first one I saw and clicked on, and perfect!!! I'll swap out the herbs for fresh garlic, and a bit of lemon juice. Looking forward to making this and shoving it in my face hole lol, thanks Chris. Watched from Perth West Aust :).

Although I don’t and wouldn’t normally prepare my trout this way as an angler, I learned a key point here. I have been over powering the flavor of my fish and am going to try to use more minimal seasonings. I think on the BBQ I will stick to my brown sugar mountain rub 😊

The skin came off just as you showed. I don't have fresh parsley, but I do have fresh basil. I will give that a try and hope it taste good. Thanks!

You make trimming the skin look ridiculously easy. I suspect there were many butchered attempts before that smooth technique was mastered!😁

And if you want you can eat the skin. If done right it can be nice and crispy and in my opinion very delicious

An excellent technique. I’ve used it twice now with rainbow trout, in a well-cured cast iron pan. The first time, exactly as done in the vid; the second time, the same, but I didn’t have thyme so i used tarragon and added minced fresh garlic, as you suggest. I highly recommend tarragon (and garlic) for this method. It was delicious. Thanks for the informative vid.

PS I love the Maritimes — in fact my sister and her husband just moved to NS last week. Next time I’m down east i will make a point of checking out your establishment.

Chef Chris, I didn't have any lemon, so I substituted with the juice of an orange.
It was very tasty!
I used the same seasonings on my Sugar Snap Peas, which was a great accompaniment.
Again, thank you for your tips!
