I'm making chili in my slowcooker today just to try this dish.
You're truly an amazing cook, Kev and you've inspired me so many times you have no idea. Thanks so much for that as I lost my passion for awhile and gave up. I can still enjoy cooking at home as I'm so disabled I'd never be able to work a long day in a professional setting. My dying body just couldn't handle it. I really miss the old days before I was diagnosed and told I was slowly dying. I got mad at the world and everyone around me. Today I really try to check myself because you never know if that person you may be about to yell at is having a crappy day and if they were going to help they wouldn't because of being yelled at

Kev I was just watching your video ‘taquitos to chimichanga’ video.. it reminded me of the best tacos I’ve ever had. You take a dish & fill it with Parmesan cheese and right after frying the corn tortilla you dip it in the Parmesan cheese BOTH SIDES.. while they’re hot & fold the in half. Make them all.. then when you go to add the tacos ingredients you pull apart the shells and they’re ooey gooey yummy!! When I was a kid we used to beg our parents for money to buy them at a place called Jimboys Tacos. We did many chores for the money. What a treat! Try it sometime. Every time I make them my family goes crazy for it! Rice & beans and done. 😋

Thank God finally somebody who knows how to make a freaking omelette. You are one of the very few people I've ever seen that actually flips The omelet before they put the toppings on. everybody else just has half omelette half raw egg oozing and uncooked toppings. You'll be the holy Grail if you make your grilled cheese by toasting then flipping the toast to grill the other side while you put the cheese on the toasted side. Double the caramelization, double the taste.
