Learn how to make this tasty Peruvian Lomo Saltado recipe of stir-fried beef with peppers and onions in an umami soy-beef sauce for an incredible week night meal. My family could not stop eating this and we’re in love with the sauce.

→ Ingredients
• 1 cup long-grain rice
• 2 cups water minus 2 tablespoons
• 1 ½ pounds beef tenderloin
• 5 tablespoons avocado oil
• ½ teaspoon ground cumin (optional)
• 2 pounds russet potatoes
• ½ peeled red onion, cut into wedges
• 1 seeded julienne yellow bell pepper
• 1 seeded Julienne jalapeño
• 2 finely minced garlic cloves
• 3 tablespoons soy sauce
• 1 tablespoon oyster sauce
• 1 tablespoon distilled white vinegar
• ½ cup beef stock
• 3 seeded, thickly sliced Roma tomatoes
• 3 tablespoons minced fresh cilantro
• 1 teaspoon dry oregano (optional)
• 3 green onions, cut into 1” long pieces (optional)

A little Peruvian secret, toast a teaspoon of garlick paste before adding the rice, then cook the rice like you did on step 1 so when you add the salt and water it has a toasty garlicky flavor to it, it makes a huge difference and we love it here.

As a Peruvian, we add garlic to the rice! It makes it better, believe me. Great video! Lomo Saltado is my favorite.

This is a staple in my house. Thank god for a Peruvian wife. Life hack though. Crispy fried egg on top over medium. The sauce that gets made with that yolk is perfection.

My coworker is from Peru, she took me out on Peruvian Independence day and this is what I ate. No rice though but the French fries soak up the juices and it's delicious

Peru has GREAT FOOD! One of my favorties (I lived there about 3 months and will visit again) was called PAPAS HUANCAINA. I love South America and every country is very different. Just like many mistake the US as one country, we are 50 different countries basically in an organization like the EU. Salute to any Peruvians out there

Rice is so versatile! I learned how South Americans cook rice, which is similar to what you did. In Panama, and other countries (mostly in the islands) we cook it differently but the result is the same, sort of. We toast the rice on oil, butter or a combination of both, and sometimes we add fresh garlic at that point, then we add water until it boils, and when it does we cover it and lower the the heat to the lowest setting until the water evaporates. I LOVE lomo saltado! I don't have a fryolator so I buy steak fries from a restaurant and do everything else at home ;)

Had a Peruvian boyfriend years ago who got me hooked on this dish. Now years later i have to go to the local Peruvian restaurant to get this dish. I can't seem to make it like he did! Great show Chef! I will give you method a try!
