Hello, thx for the video, it was helpful. I have an additional question, I have a case where there is a theme installed, but I was using Elementor Pro and CrocoBlock to make custom templates for the pages and archives and posts. If I update the theme in the way you have presented will I lose all those custom-made templates? thx

If you do what this guy did, you are going to ruin your site : ))
First of all create a child-theme, back-up the site, move it into a staging environment like your local pc, or create subdomain, and then update the theme, if everything is good, follow the steps into the live site.
