Cheesy Twice Baked Potatoes!

Follow the recipe
- Pierce a potato with a fork and bake it at 425 degrees F for an hour
- Slice the top off the potato and scoop out the inside
- Combine the scooped potato with 1 tablespoon of sour cream, 1 tablespoon of butter, 1 tablespoon of Parmesan cheese, 1 tablespoon of shredded cheddar, 1 teaspoon of smoked paprika, 1 teaspoon of onion powder, and a pinch of salt and pepper
- Transfer the mixture to a ziploc bag or piping bag and add it to the hollowed out potato
- Bake for another 20 minutes at 425 F, garnish with chopped chives

You can make these ahead of time, lay them on a cookie sheet after cooking let them cool and put them in the freezer. After frozen put them in a plastic bag. Pull them out when you want one for dinner or a snack, just microwave them. I learned this while working for a large company that used to throw out all their baked potatoes, there was so much food waste going on.

What do you with the top you cut off? Add to the side of the plate or back on the top of the potato when serving? Serious question.

Pro tip, flip the top you cut off and place it at the bottom of the tater. The volume will look thicker and bigger, and you have more tater.

Fry with butter till crispy, put in hot dog bun with cheese and hot dog.

These are great! But it's a waste of time and a bag. Just take a spoon and scoop it back into the potato skins and go from there. It's quicker and no need for the bag.
