This is a very old French recipe called potato surprise and I do believe this was the Original way before America decided to AMERICANIZE IT!! HAHAHA, I'm back to a regular schedule now my friends!! I was going through some heavy stuff in case you were wondering, I am much better now.

I tried this one, and I hate to say it mydude, but it's the first recipe of yours I did not care for. Everyone has something they love, and I'm sure so many love this one! It's just not for me. And to be clear--- I have now tried at least 15 of your recipes, and I LOVE, LOVE, LOVE all the others! You are still my favorite cook channel. Thanks for what you do, and I love your enthusiasm, wit, comedy and professionalism. I own a potato ricer and a micro plane and better vegetable peelers because of you.

Did this yesterday. Only I roasted the Potatoes with the rosemary salt on the skin IYKYK! I love eating the skin at the end. Also I used chives, bacon, cheddar, and finished with brown butter.

Nice work. Love how you keep it real. Just genuine cooking with everyday kitchen frustrations we all face.

I just did this with smoked bacon.
I used my weber kettle, threw some applewood wood chunks for smoke flavor next to the lump charcoal, and baked the potato inside with the bacon and wood smoke. Bacon was done in 20 minutes; potato took another 30 minutes.
I set the bacon aside to cool and chopped it up to get it ready to sprinkle onto the potato later. Followed the recipe for everything else but added some bacon bits into the reduced heavy cream. Put it back into the weber kettle to finish, topped it with more bacon bits and chives, threw on a dollop of sour cream, yum yum come git you some! The addition of the charcoal and applewood smoke flavors really elevated it for me! Now my wife expects this anytime we plan to BBQ anything on the weber kettle lol.
