A vegetarian's delight from the west coast of India, Patra is a simple recipe that everyone enjoys. Here is your inspiration to make some yourself!!!

Ingredients Required to make Patra -
6 to 8 Patra
Rice and toor daal roasted flour OR 2 cups of BESAN pinch of hing
1 to 2 tsp Garlic paste (optional)
1 tbsp of Ginger Chilli Paste
3 to 4 tbsp of Tamarind and Jaggery Water
1 tbsp Red Chilli Powder
1 tbsp Cumin Powder
1 tbsp Turmeric Powder
1/2 cup Curd
Salt to taste
Sesame Seeds
Mustard Seeds
Finely chopped Coriander Leaves
Freshly grated Coconut

Method to make Patra -
1. Wash and dry the patra / Colocasia leaves using a kitchen towel. Cut the stem and keep it aside.
2. In a bowl add SEKELO LOT (1.5 cups of rice and a half cup of toor dal which is dry roasted cooled and finely ground) OR 2 cups of BESAN, a pinch of hing, 1 to 2 tsp garlic paste (optional), 1 tbsp of ginger chilly paste, 3 to 4 tbsp of tamarind and jaggery water (just mix a small ball of tamarind along with some jaggery mix well and use this water), 1 tbsp red chilly powder, 1 tbsp cumin powder, 1 tbsp turmeric powder, salt, 1tspn turmeric powder, half cup curd. Mix and make a thick batter.
3. Spread the batter on the less shiny part of the patra and fold as shown in the video.
4. Steam the patra for 25 mins or till done. Cook on medium to high flame.
5. Remove once done. You will see the colour of the patra has changed which is a sign of it being cooked. Let it cool and cut into medium-sized pieces.
6. In a pan add 3 tbsp oil, mustard seeds and sesame seeds. Add the patra and fry on both sides till crispy. Eat.
