Corn Casserole Recipe with Jiffy Corn Mix

I think it’s safe to say that if corn was a love language it would be mine. I could eat corn every day in every way possible. I hope you give this recipe a try because it’s one of my favorites.

👩🏻‍🍳 CORN CASSEROLE

1 can (15.25 oz) whole kernel sweet corn, drained
1 can (14.75 oz) cream style sweet corn
½ cup melted butter (1 stick)
2 beaten eggs
1 cup sour cream
1 pkg. (8.5 oz) Jiffy corn muffin mix
4 oz. shredded sharp cheddar cheese

Bake at 350F or 176C for 40 minutes. Top with cheese and bake an additional 15 minutes.

If you love corn you should visit South Jersey in mid July thru August. We have the absolute best corn… Silver Queen White Corn. We eat it raw in a corn salad with cilantro, lime juice a little olive oil S & P. Or we cook it for 3 min. It’s amazing. Thanks for the sharing. My channel needs updating lol
