I was taught to cook it with even lower temp than this so it is without bubbles and no colouration at all on the bottom. But hey it's just a fried egg. Love this channel.

I used this method to cook my eggs after watching this. The only change I had to make had more to do with the shitty sad eggs I have where the really heavy gelatineous white around the yolk is so thick that it has to be pulled out with a spatula or it will never cook. They then became the eggs I love! I can't believe it took so long to discover these wonderful vids. Just started watching this gentleman's videos and so far I have applied the egg cookery advice and the recipe for the pork cutlet in the mushroom cream sauce. I am now deciding on a chicken dish next.

Interesting about the color and spice. What do you think about covering the egg while cooking to allow steam to cook the egg from above?

I would ad a bit of water and put a lid on so my yolk would get white also.

Hi, whats the name of the book? Even if its in french. I couldn't find that explanation in any of the books I've checked, even the ones from french cookng schools, so I am interested to know what s that book. Also, another explanation I can never find because it always says "butter" but it is salted butter or unsalted butter? Thank you.
