Spicy mayo goes well with so many different types of sushi and has become a staple in many sushi restaurants. But not all spicy mayo are created equal. In this video I share my recipe that I haven't changed for over 15 years, because it's so good! It consists of a bit more ingredients than the typical recipe but it will be worth it. Jun Nakajima, CHEF AND FOUNDER

Raised in a restaurant household, Jun's love for food began at a very early age. His parents have owned and operated a Japanese restaurant for over 30 years where he practiced and honed his culinary skills.

Somewhat forced upon, he was taught the art of sushi making in his teenage years. He quickly fell in love not only with the art but the endless opportunities that came with it.

He has traveled around the globe to try different styles of sushi, most importantly to Japan.

After college, Jun had taken an opportunity to live in the motherland of sushi, working for something completely outside the culinary field. In those two years his appreciation of the culture, people, history and food deepened.

He became addicted to the food scene and found himself traveling from one end of the island to the other, eating and drinking some of the best foods and drinks he's ever had. This experience became the seed which eventually bloomed to become The Sushi Man.

I will have to try this. I either hate or love spicy mayo. Some locations it always has a bitter aftertaste to me. Some places it's amazing. I imagine this one is excellent.

You can do your own mayo and use habanero infused oil no powders and it taste amazing

I've had some crazy hot spicy roll at a restaurant. I'm pretty sure they used one of those high capsaicin hot sauce (Ghost Pepper, Scorpion Pepper or Naga Pepper). Is that typically mixed into the mayo, or applied to the food directly? I think it was mixed because eating it directly could be dangerous, but it was crazy hot in a good/fun way.

I understand the separate bowls from a video making perspective but honestly people should just measure the ingredients right into the mixing bowl. it will save you washing 6 extra dishes for the same result! Start with the dry ingredients, mix them together, add the wet ingredients, mix again, then put the mayo right into the bowl. Now your clean up is much easier!
