Avocado on Toast (with poached eggs)

The amount of ingredients will always vary depending on how you like your flavours. Never be too scared to try something different.
Ingredients:
Bread (any kind will do)
Eggs (poached)
Lemon (a squeeze)
1 Avocado
½ an onion
5 cloves garlic
Salt and Pepper (to taste)
Chives and Chilli Flakes (for garnish)
Water and Dash of vinegar for poaching the eggs
1. Place peeled avocado in a bowl and add finely chopped onion and garlic. Add salt and pepper (to taste) and a squeeze of lemon juice (to avoid avocado from turning brown). Mix well until avocado is well smashed and all ingredients are well combined. Set aside.
2. Boil water with a dash of vinegar. Once boiling, bring it down to a simmer. Using a spatula, stir the water creating a vortex and drop your egg right in the centre. Leave it there for 3 minutes. Once 3 minutes is up, remove the egg from the water and place on a plate with a paper towel to absorb excess water. Repeat this process depending on how many eggs you like to cook.
3. Preheat pan on medium to high heat. Pour in some olive oil and make sure pan is well coated. Place your bread on the pan and toast both sides to your liking.
4. Assemble. On your toast, add as much avocado as you want, place poach eggs on top of the avocado, sprinkle some salt, pepper, chilli flakes and some finely chopped chives.
5. Serve and enjoy!!!
