Thank you for watching my Smoked Texas Brisket Recipe video. On this video, I smoked a prime brisket using only salt and pepper, the true Texas way. Everything was perfect but then we had a really bad wind storm move in and it killed the temperature inside my offset smoker. The temperature dropped and the wind was swirling so there was nothing I could do but try to finish off the cook. When the temperature drops like it did on me, the briskets will tighten up on you. Unfortunately this kind of stuff happens and it is what it is...at least the brisket still had a great Texas flavor.

Thanks for being humble enough to show us your cooks that don't turn out as great as you were hoping. Seeing you cook has really helped me learn. I always knew you wanted constant temperature, but until today I didn't know what adverse effects would come if your temps dropped. Thanks!

Thank you for sharing your struggles with your temp. I know you make great briskets. I had the same issue with some ribs. Once I got the right color I had to move them to the oven. You did a great job in spite of the challenges.

Great video Joe. A lot of people don’t take into account inclement weather when they are smoking a brisket and how it affects the actual cook. You know as well as I do that in Texas the wind direction and the ambient temps can change on you at a moments notice and massive drops or rises in temp affect the overall product. It was great to see you address this with your subscribers

You killed it as usual but I was ready glad to hear someone talk about how the wind effects their cooks. When the weather and wind comes across the lake in front of our house it’s the devil to deal with, even on a short cook.

Kudos for posting this up despite the wind! Great info for those who run into this situation.

Imo though, it needs more rub, no binder, and needed to go longer before wrapped. Didn’t have that pepper crust bark you see in Central TX.
