They may be nostalgic, but I quite respect the newer ones from a game design standpoint. As a game goes through updates, patches, and features (the game development cycle), they want to polish some old assets to better immerse the player in the world. This is not just with sounds, but with the textures too.
Despite Mojang having some issue with keeping Java optimized, I love how they have mastered the development cycle and give us players the ability to vote and suggest new additions and changes to the game.

What do you all think is better? The old assets or newer ones?

i started playing in 2014, but i had been watching videos since 2012. the sounds are absolutely nostalgic, and i truly believe that minecraft will be a game people play for decades to come. the kids who play minecraft now will look back at these sounds the same way we do looking back at the 2012 sounds. its a very special game

The water sounds now are a lot more varied than they used to be, which is a good thing imo! There are different sounds for different interactions with water, and the old sound is still around as well, it plays when you're fishing and a fish pulls the bobber down. Also the end portal actually having sounds that go with it makes it feel like more of a big deal opening it up, which it should be because it's the end of the game (although imo Minecraft is supposed to be more about creativity than progression so it's really only a sort-of ending)

Bedrock players, let's be honest. We thought that the 2012 minecraft sounds are the minecraft sounds today. Because some of the sounds is like from bedrock. Like the water sound and the ender chest sound
