Birthday Cake Cookies for my birthday! Why not?
This cookie recipe does not require eggs. So if you’re allergic to eggs or you just simply ran out of eggs, then try this recipe out. I used sprinkles in this recipe but you can put chocolate chips or m&m’s. Whatever your heart desires or whatever you have on hand.

RECIPE:
1 cup butter, softened
1/2 cup brown sugar
1/4 cup white sugar
1 tsp vanilla extract
1 1/2 cup all purpose flour
1/2 tsp salt
2 cups oats
1/4 cup boiling water
1 tsp baking soda
1/2 cup sprinkles

COOKIE TIP:
1. I always, I mean ALWAYS chill my cookie dough prior to baking because:
* It holds its shape when baking. You won’t have flat cookies. ( Unless you want thin and crispy cookies.)
* It develops more flavor, so chill it for at least 2 hours / overnight or longer (7 days maximum in the chiller, not the freezer.)
2. When you are baking, try not to overbake your cookies, it might look underbaked to you but it will continue its cooking time in the cookie sheet/tray.
3. After 5 minutes of cooling cookies in the cookie sheet or tray, transfer your cookies in a cooling rack.

A little backstory:
My son was allergic to eggs when he was younger, so I had to find an egg free cookie recipe for him. So I saw this recipe online (can’t remember the website), tweaked it a little bit and then this recipe was born.
This has been my egg free cookie recipe ever since.
