Fluffy, tender, old fashioned pancakes from scratch! Simple to make & taste great!

This 1953 recipe is easy and once you try it, you'll never use a box mix again!

INGREDIENTS
[Makes approximately 12 - 16 pancakes]
2 eggs
2 cups of milk
1/4 cup vegetable oil (orig. recipe says that melted shortening or bacon fat are fine too!)
2 1/2 cups of all purpose flour (sifted)
2 tbsp baking powder
2 tbsp white sugar
1 tsp salt

*It's important to not overheat or underheat your pan/griddle. "The water test" is a tried and true way of checking to make sure your pan is at the right cooking temperature. See video for details.

TO REHEAT FROZEN PANCAKES in the MICROWAVE
[Results will vary depending on the power and settings of your microwave]

1. Place frozen pancake(s) in single layer on a microwave-safe plate.
2. Cook on 50% power (or on defrost mode depending on your settings) for approximately 1 minute and check for doneness.

Enjoy!

I never knew how to get the pan heat just right when starting, I always figured my first pancake would be a dud. Thanks for the tip!
