If the mail icon of your iPhone is somewhere buried inside the folder and if you can not find it then the easiest way to get it on the home screen is to go to "Settings". Then "General". Scroll down, go to "Rest" and select "Reset Home screen layout" and then select "Reset Home screen". Once you do that one you will find the mail app icon on the home screen again.

Please note: that resetting the home screen means 'Alphabetizing' them so I would not recommend this if like your apps are grouped by category. It also did not work. I went to the App Store and downloaded another Email App, then went to -Settings>Passwords & Accounts>Accounts>then simply added the accounts that were previously on my list of Email Accounts as before.

One more solution: With iOS 14 it can be removed from the home screen without being deleted. If you have iOS 14, go to the App Library (swipe left past your last home screen). From there you can touch and hold an app and slide it left back to the home screen.
This helped me.
